One shot or two? Mr Lyan creates exclusive fruit tea cocktails for Wedgwood

‘That most studious of bartending gentlemen Mr Lyan’ – as his website styles him – was so keen to get behind the bar, his 18th birthday cards were still on the mantlepiece when he poured his first drink.

13 years later, he’s twice been named UK bartender of the year and in 2015 was crowned international bartender of the year.

He’s currently applying his unique mixology skills at his own award-winning bars, White Lyan in Hoxton and Dandelyan at the Mondrian Hotel, smack in the heart of London’s arty south bank.

And unique he certainly is. White Lyan, for example, is the first cocktail bar in the world to use no perishables – no fruit and even no ice – resulting in a remarkably negligent amount of waste.

It was this free-thinking approach that led Wedgwood to ask Mr Lyan – born Ryan Chetiyawardana – to to create a series of innovative cocktails to celebrate its new Tea Garden collection of fruit teas and teaware.

The range takes inspiration from nature to celebrate the art of making and taking tea. Its vibrant design, updated from designs found in the Wedgwood archives, honours that most English of traditions but imbues it with a striking contemporary spirit that’s the perfect match for Mr Lyan’s bartending philosophy.

Raspberry Punch

Method:

  1. Brew 4g of tea in 150ml boiling water for 3 minutes, strain and cool.
  1. Add 40ml cream gin, 40ml tea, 15ml lemon, 15ml sugar syrup, 3 dashes of rhubarb bitters to a cup over ice.
  1. Stir, top with sparkling white wine and garnish with a strip of rhubarb and a sprig of mint.

Bramble Broth

Method:

  1. Brew 4g of tea in 150ml boiling water for 3 minutes, strain and cool.
  1. Crush two blackberries in the base of a shaker and add 50ml tea, 50ml pressed apple, 4 mint leaves and 15ml elderflower cordial. Shake and strain into a cup and add crushed ice.
  1. Garnish with a blackberry and a sprig of thyme.

Lemongrass Sling

Method:

  1. Brew 4g of tea in 150ml boiling water for 3 minutes, strain and cool.
  1. Build 30ml tea, 30ml Martini Bianco, 30ml apple juice and 3 dashes orange bitters over ice and crown with soda.
  1. Garnish with a strip of grapefruit zest.

Garden M

Method:

  1. Brew 4g of tea in 150ml boiling water for 3 minutes, strain and cool.
  1. Build 30ml Seedlip Garden, 30ml tea, 10ml agave over ice, stir, then top with Fever Tree Lemon Tonic.
  1. Garnish with sugar snap peas.
